Canadian Tire Oromocto has a decent selection of fly tying supplies- the best around here.
You might want to try Fredericton Outfitters as well - located in Marysville - I know they sell fly fishing gear - not sure of materials.

I buy materials from lots of different places but if you're looking to purchase online, WW Doak is really good. They have a decent website and they've always been really friendly and helpful and reply to email questions pretty quickly too.
